Ingredients
  

Potatoes
  • 4 pieces Russet potatoes medium-sized
Toppings
  • 4 tablespoons Butter for serving
  • 1 cup Sour cream for serving
  • 1 cup Chives chopped, for garnish
  • 1 cup Cheddar cheese shredded, for serving

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash the potatoes thoroughly under cold water and scrub the skins.
  3. Poke several holes in each potato with a fork to allow steam to escape.
  4. Rub the skins with olive oil and sprinkle with salt.
Baking
  1. Place the potatoes directly on the oven rack or on a baking sheet.
  2. Bake for 45-60 minutes, or until the skins are crispy and a fork easily pierces the flesh.
Serving
  1. Remove the potatoes from the oven and let them cool for a few minutes.
  2. Cut a slit in the top of each potato and gently squeeze the ends to fluff the insides.
  3. Top with butter, sour cream, chives, and cheddar cheese as desired.
