Preparation
- Preheat the oven to 425°F (220°C).
- Wash the potatoes thoroughly under cold water and scrub the skins.
- Poke several holes in each potato with a fork to allow steam to escape.
- Rub the skins with olive oil and sprinkle with salt.
Baking
- Place the potatoes directly on the oven rack or on a baking sheet.
- Bake for 45-60 minutes, or until the skins are crispy and a fork easily pierces the flesh.
Serving
- Remove the potatoes from the oven and let them cool for a few minutes.
- Cut a slit in the top of each potato and gently squeeze the ends to fluff the insides.
- Top with butter, sour cream, chives, and cheddar cheese as desired.
