Ingredients
  

Chicken
  • 2 lbs boneless, skinless chicken breasts grilled and sliced
  • 1/2 cup BBQ sauce for marinating
Salad Base
  • 6 cups mixed salad greens such as romaine, spinach, and arugula
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1 cup corn canned or grilled
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Marinate the chicken breasts in BBQ sauce for at least 15 minutes.
  2. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest before slicing.
Assemble the Salad
  1. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, corn, and avocado.
  2. Slice the grilled chicken and place it on top of the salad.
Make the Dressing
  1. In a mixing bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
Serve
  1. Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
