Prepare the Chicken
- Preheat the grill to medium-high heat. Marinate the chicken breasts in BBQ sauce for at least 15 minutes.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest before slicing.
Assemble the Salad
- In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, corn, and avocado.
- Slice the grilled chicken and place it on top of the salad.
Make the Dressing
- In a mixing bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
Serve
- Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
