Ingredients
  

For the Salad
  • 2 cups grilled chicken breast, sliced BBQ flavored
  • 4 cups mixed salad greens such as romaine, spinach, and arugula
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup corn, canned or grilled
  • 1/2 cup red onion, thinly sliced
For the Dressing
  • 1/4 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey optional for sweetness

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with salt, pepper, and BBQ sauce. Grill for about 6-7 minutes on each side or until fully cooked. Remove from grill and let rest before slicing.
Assemble the Salad
  1. In a large mixing bowl, combine the salad greens, cherry tomatoes, cucumber, corn, avocado, and red onion.
  2. Add the sliced grilled chicken on top.
Make the Dressing
  1. In a small bowl, whisk together the BBQ sauce, olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
Serve
  1. Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
