  • 3 tablespoons ice water Helps bind the dough together.
For the Caramelized Onions
  • 3 large onions (sliced thin) Sweet onions like Vidalia or Walla Walla work best.
  • 2 tablespoons olive oil Butter can be mixed in for added richness.
  • 1 tablespoon balsamic vinegar Red wine vinegar is a good substitute.
  • Salt and pepper to taste Add a pinch of each while cooking.
For the Filling
  • 3 large eggs Can replace with flax eggs for vegan options.
  • 1 cup heavy cream Half-and-half can be used for a lighter version.
  • 1 cup grated Gruyère cheese Swiss cheese works well as an alternative.
  • 1 teaspoon fresh thyme leaves Or 1/2 teaspoon dried thyme.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Sauté the onions in a skillet with olive oil over medium heat for about 15-20 minutes until soft and golden brown.
  3. Prepare the crust by rolling out your pastry dough on a floured surface and fit it into a tart pan.
  4. Blind bake the crust by placing parchment paper over it and filling with pie weights. Bake for 10 minutes at 375°F (190°C).
  5. Combine the sautéed onions with fresh herbs, cheese, and eggs in a mixing bowl. Stir until well combined.
  6. Fill the pre-baked crust with the onion mixture evenly.
  7. Bake in the preheated oven for an additional 25-30 minutes.
