Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
Wet Ingredients
  • 1 cup grated carrots
  • 1 large egg
  • 1/2 cup milk can use plant-based milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease the muffin tin.
  2. In a mixing bowl, combine all dry ingredients and whisk together.
  3. In another bowl, mix together the grated carrots, egg, milk, vegetable oil, and vanilla extract.
Baking
  1. Pour the wet ingredients into the dry ingredients and stir until just combined.
  2. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  3. Bake in the preheated oven for 20 minutes or until a toothpick comes out clean.
  4. Let cool for a few minutes before removing from the tin.
