Preparation
- Preheat the oven to 350°F (175°C) and grease the muffin tin.
- In a mixing bowl, combine all dry ingredients and whisk together.
- In another bowl, mix together the grated carrots, egg, milk, vegetable oil, and vanilla extract.
Baking
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 20 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before removing from the tin.
