Preparation
- Preheat the oven to 350°F (175°C).
- In a skillet, combine the shredded chicken and half of the enchilada sauce over medium heat until warmed through.
- In a mixing bowl, combine the black beans, corn, and remaining enchilada sauce.
Assembly
- Spread a thin layer of the chicken mixture on the bottom of the baking dish.
- Layer 4 tortillas over the chicken mixture, then add half of the bean and corn mixture, followed by a layer of cheese.
- Repeat the layers, finishing with tortillas, the remaining chicken mixture, and top with cheese.
Baking
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving. Serve with sour cream if desired.
