Chicken Enchilada Casserole

Ingredients
  

Casserole Base
  • 2 cups cooked shredded chicken
  • 1 can enchilada sauce 15 oz
  • 8 oz tortillas corn or flour
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 cup black beans cooked and drained
  • 1 cup corn canned or frozen
  • 1 cup sour cream optional for serving

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, combine the shredded chicken and half of the enchilada sauce over medium heat until warmed through.
  3. In a mixing bowl, combine the black beans, corn, and remaining enchilada sauce.
Assembly
  1. Spread a thin layer of the chicken mixture on the bottom of the baking dish.
  2. Layer 4 tortillas over the chicken mixture, then add half of the bean and corn mixture, followed by a layer of cheese.
  3. Repeat the layers, finishing with tortillas, the remaining chicken mixture, and top with cheese.
Baking
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  3. Let it cool for a few minutes before serving. Serve with sour cream if desired.
