Ingredients
  

Sandwich Base
  • 8 slices white bread or whole grain
  • 4 oz cream cheese softened
Cucumber Filling
  • 1 large cucumber thinly sliced
  • 1 tbsp fresh dill chopped
  • 1 tbsp lemon juice

Method
 

Prepare the Filling
  1. In a mixing bowl, combine the softened cream cheese, chopped dill, lemon juice, and salt. Mix until smooth and well combined.
Assemble the Sandwiches
  1. Spread a generous layer of the cream cheese mixture on one side of each slice of bread.
  2. Layer the thin cucumber slices evenly over half of the bread slices.
  3. Top with the remaining bread slices, cream cheese side down, to form sandwiches.
Cut and Serve
  1. Trim the crusts off the sandwiches and cut them into quarters or triangles. Arrange on a serving platter.
