Preparation
- Peel and chop the potatoes into even chunks.
- Place the chopped potatoes in a large pot, cover with cold water, and bring to a boil.
- Simmer for about 15-20 minutes until the potatoes are fork-tender.
- Drain the potatoes and let them sit for a minute to let excess moisture escape.
Cooking
- Return the drained potatoes to the pot, add warm milk and butter, and mash until smooth.
- In a skillet, melt butter over medium heat and sauté the chopped cabbage for about 5 minutes until wilted.
- Fold the sautéed cabbage into the mashed potatoes until well incorporated.
- Serve warm, optionally topping with chopped scallions and an extra pat of butter.
