  • 1 cup cottage cheese preferably low-fat
  • 1/2 cup peanut butter creamy or crunchy
  • 1/4 cup honey or maple syrup for sweetness
  • 1 teaspoon vanilla extract
  • 1/4 cup milk or dairy-free alternative
Toppings
  • 2 tablespoons chopped peanuts for garnish
  • 1 tablespoon cocoa powder optional for dusting

Method
 

Prepare the Mousse
  1. In a blender, combine cottage cheese, peanut butter, honey, vanilla extract, and milk. Blend until smooth and creamy.
  2. Taste and adjust sweetness if necessary by adding more honey.
  3. Transfer the mousse to a mixing bowl and chill in the refrigerator for at least 30 minutes.
Serve
  1. Spoon the mousse into serving dishes.
  2. Top with chopped peanuts and a dusting of cocoa powder if desired.
  3. Serve chilled and enjoy!
