Ingredients
  

Salad Base
  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 cup celery, diced
  • 1 cup red grapes, halved
  • 1/2 cup almonds, sliced Optional for crunch.
  • 1/4 cup green onions, chopped
Curry Dressing
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter option.
  • 1 tablespoon curry powder Adjust to taste.
  • 1 tablespoon honey For sweetness.
  • 1 tablespoon lemon juice Freshly squeezed is best.
  • 1/4 teaspoon salt To taste.
  • 1/4 teaspoon black pepper To taste.

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded chicken, diced celery, halved grapes, sliced almonds, and chopped green onions.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, curry powder, honey, lemon juice, salt, and black pepper until smooth.
Combine
  1. Pour the curry dressing over the salad mixture and toss until everything is well coated.
Serve
  1. Chill in the refrigerator for at least 30 minutes before serving for best flavor.
