Salad Base
  • 4 cups mixed greens such as spinach, arugula, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber sliced
  • 1 bell pepper bell pepper diced
  • 1/2 cup red onion thinly sliced
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey or maple syrup for vegan option
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • to taste salt
  • to taste black pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion.
  2. In a separate bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and black pepper until well combined.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for up to 30 minutes before serving.
