Ingredients
  

Cake
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup milk room temperature
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
Frosting
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
Toppings
  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1 cup kiwi sliced

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Add softened butter, milk, eggs, and vanilla extract. Beat on medium speed for 2 minutes until smooth.
  4. Pour the batter evenly into the prepared pans.
  5. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow cakes to cool in pans for 10 minutes, then remove and cool completely on wire racks.
Frosting and Assembly
  1. In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla, and continue whipping until stiff peaks form.
  2. Place one cake layer on a serving plate. Spread a layer of whipped cream frosting on top.
  3. Add a layer of sliced strawberries, blueberries, and kiwi on top of the frosting.
  4. Place the second cake layer on top and frost the top and sides of the cake with the remaining whipped cream.
  5. Decorate the top with additional fresh fruits as desired.
  6. Chill the cake for at least 30 minutes before serving to set the frosting.
