  • 1 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper freshly ground
  • 1 teaspoon honey optional for sweetness

Method
 

Preparation
  1. In a bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, salt, and black pepper until well combined.
  2. If using, add honey and whisk until fully incorporated.
  3. Transfer the dressing to a jar with a lid and refrigerate for at least 30 minutes to allow the flavors to meld.
  4. Shake well before serving over your favorite salad.
