Ingredients
  

Chicken Marinade
  • 1 pound boneless, skinless chicken breasts cut into 1-inch cubes
  • 2 tablespoons olive oil for marinade
  • 2 tablespoons soy sauce low sodium preferred
  • 1 tablespoon lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
Vegetables (optional)
  • 1 bell pepper cut into chunks any color
  • 1 red onion cut into chunks
  • 1 zucchini sliced

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, soy sauce, lemon juice, minced garlic, paprika, oregano, salt, and black pepper. Mix well.
Marinate the Chicken
  1. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken and optional vegetables onto the skewers.
Grill the Skewers
  1. Preheat the grill to medium-high heat. Place the skewers on the grill and cook for 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove the skewers from the grill and let them rest for a few minutes before serving. Enjoy with your favorite dipping sauce or side dish.

Notes
