Ingredients
  

For the Marinade
  • 1/2 cup soy sauce Low-sodium soy sauce is a healthier option
  • 1/4 cup brown sugar Honey can be used as a substitute
  • 2 tablespoons sesame oil Can replace with olive oil for a lighter taste
  • 4 cloves garlic (minced) Use 1 teaspoon garlic powder if you're in a pinch
  • 1 tablespoon grated fresh ginger Ground ginger works, but use less
  • 1 tablespoon rice vinegar Apple cider vinegar is a good alternative
For the Chicken
  • 2 lbs chicken thighs (boneless, skinless) Breasts can be used for a leaner dish
  • 1 tablespoon sesame seeds Toast them lightly for added crunch and flavor
For Garnishing
  • 1/4 cup cilantro (chopped) Omit if you're not a fan of cilantro's distinct taste

Method
 

Preparation
  1. In a bowl, whisk together soy sauce, sesame oil, garlic, ginger, and brown sugar to prepare the marinade.
  2. Place your chicken in a resealable bag or shallow dish and pour the marinade over it. Let it sit in the refrigerator for at least 30 minutes—ideally up to 4 hours.
  3. Preheat your grill to medium-high, around 400°F.
  4. Remove the chicken from the marinade, letting excess drip off. Grill each piece for about 6-8 minutes per side until cooked through.
  5. After grilling, let the chicken rest for about 5 minutes before slicing.
