Ingredients
  

Lamb Loin
  • 2 pounds lamb loin trimmed
  • 2 tablespoons olive oil for searing
  • 2 teaspoons salt to taste
  • 1 teaspoon black pepper freshly ground
  • 2 teaspoons rosemary fresh, chopped
  • 2 teaspoons thyme fresh, chopped
  • 4 cloves garlic minced
  • 1 cup red wine for deglazing

Method
 

Prepare the Lamb
  1. Preheat the oven to 400°F (200°C).
  2. Rub the lamb loin with olive oil, salt, pepper, rosemary, thyme, and minced garlic.
  3. Let the lamb sit at room temperature for 15 minutes.
Sear the Lamb
  1. Heat a roasting pan over medium-high heat.
  2. Sear the lamb loin on all sides until browned, about 3-4 minutes per side.
Roast the Lamb
  1. Transfer the roasting pan to the preheated oven and roast for 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  2. Remove the lamb from the oven and let it rest for 10 minutes before slicing.
Deglaze the Pan
  1. Place the roasting pan over medium heat on the stovetop.
  2. Add red wine and scrape up any browned bits from the bottom of the pan.
  3. Simmer for 5 minutes to reduce slightly, then strain if desired.
Serve
  1. Slice the lamb loin and serve with the red wine sauce drizzled over the top.
