Ingredients
  

Egg Mixture
  • 8 large eggs beaten
  • 1/4 cup milk optional
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Beans and Tortillas
  • 1 can refried beans heated
  • 8 small corn tortillas warmed
Toppings
  • 1 cup fresh cilantro chopped
  • 1 cup salsa for serving
  • 1 cup avocado sliced
  • 1/2 cup cheddar cheese shredded

Method
 

Prepare the Egg Mixture
  1. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
Cook the Eggs
  1. Heat a skillet over medium heat and pour in the egg mixture. Cook, stirring gently, until the eggs are scrambled and fully cooked, about 5-7 minutes.
Warm the Beans and Tortillas
  1. In another skillet, heat the refried beans until warm. Simultaneously, warm the corn tortillas in a dry skillet until pliable.
Assemble the Breakfast
  1. On each plate, place two warm tortillas, top with a generous scoop of refried beans, scrambled eggs, and your choice of toppings such as cilantro, salsa, avocado, and cheese.
