Cooking the Chicken
- Heat olive oil in a skillet over medium heat. Season the chicken breasts with the spice mixture.
- Add the chicken to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through.
Adding Vegetables
- Remove the chicken from the skillet and set aside. In the same skillet, add the sliced bell peppers and onion. Sauté for 5 minutes.
- Add corn and chicken broth to the skillet, stirring to combine.
Finishing Touches
- Return the chicken to the skillet, cover, and let simmer for 10 minutes.
- If desired, sprinkle shredded cheese on top and cover until melted.
