Ingredients
  

Chicken
  • 4 pieces boneless chicken breasts skinless
Spices
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Vegetables
  • 1 cup bell peppers sliced
  • 1 cup onion sliced
  • 1 cup corn canned or frozen
Others
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1 cup shredded cheese optional, for topping

Method
 

Cooking the Chicken
  1. Heat olive oil in a skillet over medium heat. Season the chicken breasts with the spice mixture.
  2. Add the chicken to the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through.
Adding Vegetables
  1. Remove the chicken from the skillet and set aside. In the same skillet, add the sliced bell peppers and onion. Sauté for 5 minutes.
  2. Add corn and chicken broth to the skillet, stirring to combine.
Finishing Touches
  1. Return the chicken to the skillet, cover, and let simmer for 10 minutes.
  2. If desired, sprinkle shredded cheese on top and cover until melted.
