Prepare the Grits
- In a saucepan, bring water or chicken broth to a boil. Stir in the grits and salt, reduce heat to low, and cook for about 20 minutes, stirring occasionally, until thickened.
- Once cooked, remove from heat and stir in the butter and cheddar cheese until melted and creamy.
Cook the Shrimp
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the shrimp, paprika, and cajun seasoning. Cook for 3-4 minutes until shrimp are pink and opaque.
- Finish with lemon juice and stir to combine.
Assemble and Serve
- Spoon the creamy grits into serving dishes and top with the sautéed shrimp. Garnish with chopped green onions.
- Serve immediately and enjoy your mini shrimp and grits!
