Ingredients
  

For the Grits
  • 1 cup grits preferably stone-ground
  • 4 cups water or chicken broth for more flavor
  • 1 cup sharp cheddar cheese shredded
  • 2 tablespoons butter
  • 1 teaspoon salt to taste
For the Shrimp
  • 1 pound shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon cajun seasoning optional
  • 1 tablespoon lemon juice freshly squeezed
  • 2 tablespoons green onions chopped, for garnish

Method
 

Prepare the Grits
  1. In a saucepan, bring water or chicken broth to a boil. Stir in the grits and salt, reduce heat to low, and cook for about 20 minutes, stirring occasionally, until thickened.
  2. Once cooked, remove from heat and stir in the butter and cheddar cheese until melted and creamy.
Cook the Shrimp
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add the shrimp, paprika, and cajun seasoning. Cook for 3-4 minutes until shrimp are pink and opaque.
  3. Finish with lemon juice and stir to combine.
Assemble and Serve
  1. Spoon the creamy grits into serving dishes and top with the sautéed shrimp. Garnish with chopped green onions.
  2. Serve immediately and enjoy your mini shrimp and grits!

Notes

For a spicier version, add more cajun seasoning or hot sauce to the shrimp.
