Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 3 large eggs room temperature
  • 1 tbsp orange zest freshly grated
  • 1 tsp vanilla extract
Add-ins
  • 1 cup chopped almonds or walnuts
  • 1/2 cup dried cranberries optional

Method
 

Prepare the Dough
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs, then add the orange zest and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the chopped almonds and dried cranberries if using.
Shape and Bake
  1. Divide the dough in half and shape each half into a log about 12 inches long on the prepared baking sheet.
  2. Bake for 25-30 minutes, or until golden brown. Remove from the oven and let cool for 10 minutes.
  3. Slice the logs diagonally into 1/2 inch thick pieces.
  4. Place the slices back on the baking sheet and bake for an additional 10-15 minutes until crisp.
  5. Allow to cool completely on a cooling rack before serving.
