Ingredients
  

Pasta
  • 1 cup orzo pasta uncooked
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
  • 1 medium zucchini diced
Seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon garlic powder
Cheese
  • 1/2 cup parmesan cheese grated

Method
 

Cooking Orzo
  1. Bring a pot of salted water to a boil and add the orzo pasta. Cook according to package instructions until al dente.
  2. Drain the orzo in a colander and set aside.
Sautéing Vegetables
  1. In the same pot, heat olive oil over medium heat. Add the zucchini and sauté for 3-4 minutes until tender.
  2. Add the cherry tomatoes and spinach, cooking until the spinach wilts, about 2 minutes.
Combining Ingredients
  1. Return the cooked orzo to the pot with the sautéed vegetables. Season with salt, pepper, and garlic powder. Stir to combine.
  2. Remove from heat and stir in the grated parmesan cheese until melted.
Serving
  1. Serve warm, garnished with additional parmesan if desired.
