Ingredients
  

Cupcake Batter
  • 1 cup Pumpkin Puree Canned or fresh
  • 1 cup Whole Wheat Flour
  • 1 egg Egg Large
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon Optional
  • 1/4 cup Peanut Butter Unsweetened
  • 1/4 cup Honey Optional
Frosting (Optional)
  • 1/2 cup Greek Yogurt Plain
  • 1 tablespoon Peanut Butter Unsweetened

Method
 

Prepare the Batter
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, egg, peanut butter, and honey (if using).
  3. In another bowl, mix whole wheat flour, baking soda, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cupcakes
  1. Line a muffin tin with cupcake liners and fill each cup with the batter.
  2. Bake for 20 minutes or until a toothpick inserted comes out clean.
  3. Allow to cool completely before frosting.
Prepare the Frosting (Optional)
  1. In a bowl, mix Greek yogurt and peanut butter until smooth.
  2. Frost the cooled cupcakes with the yogurt mixture if desired.
