Method
Prepare the Batter
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine pumpkin puree, egg, peanut butter, and honey (if using).
- In another bowl, mix whole wheat flour, baking soda, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cupcakes
- Line a muffin tin with cupcake liners and fill each cup with the batter.
- Bake for 20 minutes or until a toothpick inserted comes out clean.
- Allow to cool completely before frosting.
Prepare the Frosting (Optional)
- In a bowl, mix Greek yogurt and peanut butter until smooth.
- Frost the cooled cupcakes with the yogurt mixture if desired.
