Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 bell pepper bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey or maple syrup for vegan option
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare Quinoa
  1. In a pot, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes.
Mix Salad
  1. In a large mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
Make Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, honey, garlic, salt, and black pepper.
Combine
  1. Pour dressing over the salad and toss to combine. Serve chilled or at room temperature.
