Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
Salsa
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced
  • 1 teaspoon jalapeño finely chopped, optional
To Serve
  • 4 cups cooked rice or tortillas

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine cumin, paprika, garlic powder, salt, and black pepper.
  3. Rub the chicken breasts with olive oil and then coat with the spice mixture.
Grill the Chicken
  1. Place the chicken on the grill and cook for 6-7 minutes on each side or until fully cooked.
  2. Remove from grill and let rest for a few minutes before slicing.
Make the Salsa
  1. In a separate bowl, combine diced tomatoes, red onion, bell pepper, cilantro, lime juice, and jalapeño (if using).
  2. Mix well and set aside to allow flavors to meld.
Serve
  1. Slice the grilled chicken and serve it over cooked rice or with tortillas.
  2. Top with the fresh salsa before serving.

Notes
