Prepare the Chicken
- Preheat the grill to medium-high heat.
- In a mixing bowl, combine cumin, paprika, garlic powder, salt, and black pepper.
- Rub the chicken breasts with olive oil and then coat with the spice mixture.
Grill the Chicken
- Place the chicken on the grill and cook for 6-7 minutes on each side or until fully cooked.
- Remove from grill and let rest for a few minutes before slicing.
Make the Salsa
- In a separate bowl, combine diced tomatoes, red onion, bell pepper, cilantro, lime juice, and jalapeño (if using).
- Mix well and set aside to allow flavors to meld.
Serve
- Slice the grilled chicken and serve it over cooked rice or with tortillas.
- Top with the fresh salsa before serving.
