Prepare the Gorditas
- In a mixing bowl, combine masa harina, warm water, and salt. Mix until a soft dough forms.
- Divide the dough into 8 equal balls. Flatten each ball into a disc about 1/2 inch thick.
- Cook the discs on a hot skillet or grill for about 2-3 minutes on each side until lightly browned.
Cook the Steak
- In a bowl, mix olive oil, cumin, chili powder, garlic powder, onion powder, salt, and black pepper.
- Rub the mixture onto the flank steak and let it marinate for at least 10 minutes.
- Grill the steak over medium-high heat for about 5-7 minutes per side or until desired doneness.
- Remove from grill, let it rest for a few minutes, then slice thinly against the grain.
Assemble the Gorditas
- Open each gordita and fill with sliced steak.
- Top with shredded lettuce, diced tomatoes, sour cream, cheese, and jalapeños if desired.
- Serve immediately and enjoy!
