Ingredients
  

For the Gorditas
  • 2 cups masa harina corn flour
  • 1 cup water warm
  • 1/2 teaspoon salt
For the Steak Filling
  • 1 pound flank steak or skirt steak
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Toppings
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese cheddar or queso fresco
  • 1/4 cup sliced jalapeños optional

Method
 

Prepare the Gorditas
  1. In a mixing bowl, combine masa harina, warm water, and salt. Mix until a soft dough forms.
  2. Divide the dough into 8 equal balls. Flatten each ball into a disc about 1/2 inch thick.
  3. Cook the discs on a hot skillet or grill for about 2-3 minutes on each side until lightly browned.
Cook the Steak
  1. In a bowl, mix olive oil, cumin, chili powder, garlic powder, onion powder, salt, and black pepper.
  2. Rub the mixture onto the flank steak and let it marinate for at least 10 minutes.
  3. Grill the steak over medium-high heat for about 5-7 minutes per side or until desired doneness.
  4. Remove from grill, let it rest for a few minutes, then slice thinly against the grain.
Assemble the Gorditas
  1. Open each gordita and fill with sliced steak.
  2. Top with shredded lettuce, diced tomatoes, sour cream, cheese, and jalapeños if desired.
  3. Serve immediately and enjoy!
