Ingredients
  

Pie Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 cup ice water more if needed
Filling
  • 4 cups fresh strawberries hulled and halved
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
Topping
  • 1 cup whipped cream for serving

Method
 

Prepare the Pie Crust
  1. In a mixing bowl, combine flour, sugar, and cold butter. Mix until crumbly.
  2. Add ice water gradually until the dough comes together. Form into a disk and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C). Roll out the dough and fit it into the pie pan.
  4. Prick the bottom with a fork and bake for 15 minutes until lightly golden.
Prepare the Filling
  1. In a saucepan, combine strawberries, sugar, cornstarch, lemon juice, and vanilla extract.
  2. Cook over medium heat until the mixture thickens and bubbles, about 5-7 minutes.
  3. Remove from heat and let it cool slightly.
Assemble the Pie
  1. Pour the strawberry filling into the baked pie crust, spreading it evenly.
  2. Refrigerate the pie for at least 2 hours to set.
  3. Serve with whipped cream on top.
