Method
Prepare the Shortcake Cups
- Preheat the oven to 350°F (175°C). Grease a muffin tin.
- In a mixing bowl, whisk together flour, baking powder, and sugar.
- Add melted butter, egg, and milk to the dry ingredients and mix until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 10-12 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool completely before removing from the tin.
Prepare the Strawberry Filling
- In a bowl, combine sliced strawberries and granulated sugar. Let sit for 10-15 minutes until juices form.
Prepare the Whipped Cream
- In a mixing bowl, beat the chilled heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assemble the Cups
- Once the shortcake cups are cool, remove them from the muffin tin.
- Fill each cup with the macerated strawberries and top with whipped cream.
- Serve immediately and enjoy!
