Swiss Chard Rolls

Ingredients
  

Filling
  • 1 cup cooked rice can use brown or white rice
  • 1 cup chopped Swiss chard stems removed
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 cup feta cheese crumbled
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Swiss Chard Leaves
  • 12 leaves Swiss chard large leaves, washed and stems removed
Tomato Sauce
  • 2 cups tomato sauce for topping

Method
 

Prepare the Filling
  1. In a skillet over medium heat, sauté onion and garlic until translucent.
  2. Add chopped Swiss chard and cook until wilted.
  3. In a mixing bowl, combine cooked rice, sautéed vegetables, feta cheese, oregano, salt, and pepper.
Prepare the Rolls
  1. Blanch Swiss chard leaves in boiling water for 1-2 minutes until softened.
  2. Lay a leaf flat, place 2-3 tablespoons of filling at the base, and roll tightly, tucking in the sides.
  3. Repeat with remaining leaves and filling.
Bake
  1. Preheat oven to 375°F (190°C).
  2. Spread a layer of tomato sauce in a baking dish.
  3. Place the rolls seam-side down in the dish and cover with remaining tomato sauce.
  4. Cover with foil and bake for 30 minutes, then uncover and bake for an additional 15 minutes.
