  • 1 cup soy sauce preferably low sodium
  • 1/2 cup brown sugar packed
  • 1/4 cup mirin or rice vinegar
  • 2 tablespoons honey optional for extra sweetness
  • 1 tablespoon cornstarch for thickening
  • 2 tablespoons water to mix with cornstarch
  • 1 teaspoon sesame oil for flavor

Method
 

Prepare the Sauce
  1. In a saucepan, combine soy sauce, brown sugar, mirin, and honey. Whisk together until the sugar is dissolved.
  2. In a small bowl, mix cornstarch with water to create a slurry.
  3. Add the cornstarch slurry to the saucepan and stir well.
  4. Heat the mixture over medium heat, stirring constantly until it thickens and comes to a gentle boil.
  5. Remove from heat and stir in sesame oil.

Notes
