Ingredients
  

Salad Base
  • 2 cups cabbage shredded
  • 1 cup carrot julienned
  • 1 cup bell pepper sliced
  • 1 cup cucumber sliced
  • 1/2 cup green onions sliced
  • 1/4 cup cilantro chopped
Peanut Dressing
  • 1/4 cup peanut butter smooth
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 2 tablespoons water to thin dressing

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded cabbage, julienned carrot, sliced bell pepper, sliced cucumber, sliced green onions, and chopped cilantro.
Make the Dressing
  1. In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, minced garlic, and water until smooth.
Combine and Serve
  1. Pour the peanut dressing over the salad and toss until well combined. Serve immediately.
